Apricots taste like a sweet orange with notes of pineapple, but when they are used in recipes, there is no real flavor.
One note about cooking apricots – heating them for very long periods of time will release the natural sugars and make them taste unpalatable. There is no need to cook with apricots because they naturally break down in longer baking times without adding any flavour to the dish itself.
