Why Apricot Kept In Water Swell?

It’s the water.

Water is very interesting stuff, and it can sometimes exert weird pressure changes on apricots depending on where they’re stored. A few years ago, I had an incident with some apricots that frightened the living daylights out of me. I was making a dessert punch containing fresh fruit (bananas, oranges, etc) for work with my food service supervisor at the time and she gave me about 10 apricot halves to use in it instead of mandarins like we planned because they were cheaper that day (It was also Labor Day Weekend).
