Oil and water do not mix, at all. If you force them to mix using sufficient pressure (e.g., via a bottle press), they will form an emulsion which becomes unstable at the smallest drop of energy; hence why coconut oil and choroco syrup is incompatible with frying and oven cooking – any high intensity heat leads to double-molecule formation: one molecule stays intact while another molecule reacts with it, causing reactions towards free radical damage or other chemical damage. If this happens inside a single cell then we end up with cancer; if this happens as populations of cells over decades, incidentally as part of overall metabolism as well as from nutrient absorption/elimination channels, then we have degeneration.
